As a vegetarian, I get asked A LOT if all I eat is salad…of course not! But I definitely do love to include salads into my meals…especially this amazing Apple Walnut Salad!!
It’s so easy to make and you can also add some chicken into it as well if you eat meat for that extra protein factor 🙂 thats usually what I do for Thomas and I whenever he wants a salad too…i’ll make a plate for myself, and a plate for him topped with some chicken cubes…can you say YUM??
All you need is some mixed greens (I like to buy the ready mixed power greens from Sprouts), feta or blue cheese, walnuts, a fuji apple, and some raspberry dressing.
I like to set up my ingredients so that it is way easier to put the salad together. First, I like to slice up my apple. The recipe only calls for 1/2 an apple for 1 service…so for 2 people, you can use 1 whole apple, or save the other half for a snack later 🙂
Next, take out a palm-full of walnuts and 2-3 Tbsp of feta cheese. Time to put the salad together!
Put a handful of the mixed greens onto a plate (or more if you’d like), put the apples on top and mix it together by hand. Throw in the walnuts and cheese, and top with 3 capfuls of raspberry dressing. I wouldn’t use too much dressing because it’s pretty tangy and strong so it usually makes the perfect combo with just a little bit of dressing 🙂
And here is the final result…yum!! Enjoy 🙂 And don’t forget that you can add in some chicken cubes or strips for the carnivores in your family 😉
Handful of mixed greens
1/2 Fuji Apple
2-3 Tbsp feta cheese
Palmful of walnuts
3 capfuls raspberry dressing
1/2 chicken breast–cooked cubes (Optional)
1. Slice apple into thin pieces
2. Take out 2-3 tbsp feta cheese and palmful of walnuts
3. Place a handful of mixed greens onto a plate
4. Top with apples and toss around with hands
5. Sprinkle walnuts and cheese on top. Place chicken on top (optional).
6. Drizzle 3 capfuls of raspberry dressing on top and enjoy!! 🙂
