Weeknight Meal: Make-Your-Own-Burritos

Hello friends! I’m sure many of you can relate to my constant struggle of having a full time job and long commute, while still needing to cook dinner! This recipe is inspired by my mom…she worked full time as a nurse, while also finding time to drive my sister and I around to all of our after-school sports and dance practices. One of her (and our) favorite dinners was make-your-own Mexican-pizzas. So I decided to use that idea and mix it up a little bit by making make-your-own burritos! (YUM!!) This is something that the entire family will love, even kids, because everyone chooses what they want in their burritos!

Sometimes you just need to make your life a little easier by starting off with some packaged Spanish rice and refried beans…trust me, it’s not a sin.

Cook according to instructions, and let them sit in their separate pots while waiting for the rest of the food to come together.

So, I decided to make Thomas some shrimp for his burritos, but you can do this with chicken too! I had made him chicken the day before, so shrimp it was! When making a Spanish-inspired dish, I like to season his shrimp with minced garlic, garlic salt, salt, pepper, lots of cayenne pepper, and cumin. I mix that up and let it marinate for only about 20 minutes or so before putting it into a pan to cook (which doesn’t take more than about 5 minutes on each side, until nice and pink).

Now, you may ask…what else do I put into my veggie burrito…Avocado of course! I absolutely LOVE avocado, as do many Californians. So I slice up one large avocado really nicely and set the plate aside…

And….that is basically it! How simple and quick is that?? This takes about 30 minutes to make and is a meal the entire family can enjoy! Make sure to put out some lettuce (I like using a combo of lettuce, cabbage, and cilantro for us), some cheese, salsa, and flour tortillas (I like to get my tortillas from local restaurants/grocery stores).

And that is basically it! Everyone stands in line and gets their own ingredients in their burritos…ENJOY! 🙂

Ingredients: (quantity of ingredients depends on how many people there are)

1 Package Spanish Rice

1 Can refried beans

6 pieces large shrimp

1 Large avocado

1 Package Tortillas

1 Package Cheese

1 Tub Salsa

1 Cup lettuce/cabbage/cilantro mix

Minced Garlic, Salt, Pepper, Garlic Salt, Cayenne Pepper, Cumin (to taste-for meat)

Directions:

1. Make the Spanish rice and refried beans according to instructions on package/can

2. Season shrimp, let marinate for 20 minutes in the fridge.

3. Place shrimp on a pan with vegetable oil, cook for 5 minutes on each side or until pink.

4. Slice the avocado

5. Place all ingredients in a row to make it easy for people to make-their-own burritos.

6. Eat up! Yum yum! 🙂
