20 Minute Lemon Garlic Thyme Shrimp

Hi everyone! As mentioned before… I am a busy busy gal and sometimes just don’t have the time to cook (I know, how can I say that and have a cooking blog…)

ANYWAY! Sometimes on the days when I know I will be having a late night at the office, I will cook Thomas a quick lil something in the morning for him to have for dinner… this quick 20 minute shrimp recipe is a LIFE SAVER!

Start off by thawing some frozen raw shrimp and peel the shrimp.

Heat a pan and add olive oil once the pan gets hot (super important, I think it makes a big difference to wait the extra 20 seconds). Add in some minced garlic and thyme and stir around a bit in the pan.img_8670

Add in the shrimp before the garlic burns and toss around to get the shrimp nice and covered.IMG_8671.JPG

YUMMMM now… very important… after about 1 minute, juice one lemon right into the pan. These flavors together are AMAZING OMG I CANNOT EXPLAIN. 

Alright, done being a teenage-girl and let this cook down until pink.IMG_8672.JPG

The trick about shrimp is… right when you feel like you need to let it cook for another minute, take the pan off the heat! You don’t want to overcook it, and it will still continue cooking a bit once off the heat.

Ingredients:

Dash of Thyme
1 tsp minced garlic
salt and pepper to taste
1 Lemon
15-16 shrimp

Directions:

  1. Add olive oil to heated pan
  2. Throw in minced garlic and thyme (medium heat pan, so garlic doesn’t burn)
  3. Add in Shrimp, coat with garlic and thyme from pan
  4. Juice 1 whole lemon right into the pan, add in some zest for some extra ‘mph!
  5. Cook until vibrant pink.
  6. Enjoy 🙂
